Now, what makes ceviche so special? Ceviche is a preparation of raw fish marinated in lemon, onion, chili and salt. It is a combination of fresh and spicy flavors that complement each other perfectly. In addition, ceviche is a very versatile preparation, since it can be prepared with different types of fish and seafood. There are so many varieties of ceviche that you will never get bored! 😋
But how did ceviche get declared Intangible Cultural Heritage of Humanity? It was a long and complex process that involved experts from different disciplines and civil society. Ceviche was chosen as an expression of Peruvian cuisine to achieve this title. The application focused on ceviche to avoid the generalist approach that in 2010 complicated the country's first attempt to have its food receive the iconic title awarded by the United Nations.
